Tapenade de Provence

Tapenade, fresh bread, a fruity full white wine; and you have a fantastic appetizer for your friends while they wait for the rest of the lunch to be prepared!

Ingredients:

300g pitted black olives
200g capers
100g white tuna
10 anchovies, in strips
2 cups olive oil
1 tsp mustard
1 sprig basil 
1 clove garlic
1 bay leaf
thyme
salt
pepper

Procedure:

1. Grind the olives together with the capers, anchovies, tuna and garlic, in a mortar.

2. Add the mustard, herbs, spices and olive oil and beat vigorously until you have a smooth paste.

*This can also be made in a blender. The texture will be smoother, although this will also depend on the amount of time you blend the mix for.
