Baked Vegetables - Briam
This tasty vegetable dish is very popular in Greece and is called Briam.
Ingredients:
1 kg ripe tomatoes
1/2 kg potatoes
1/2 kg eggplants
1/2 kg small zucchini
1/2 kg okra
3 chopped onions
200 ml of oil
2 tbs of chopped parsley
1 tbs chopped garlic
2 tbs cut green pepper
salt & pepper
Procedure:
Preheat oven at 180° C.
Peel wash and cut the potatoes into round slices, not too thin. Do the same with the zucchini and the aubergines (eggplants). Wash the okra thoroughly and sprinkle with some vinegar. Wash, skin and cut the tomatoes into thin slices.
Lay one half of the tomato slices over the potatoes in a baking dish and salt and pepper them.
Pour the other vegetables over the tomatoes and pepper well.
Put the onion, garlic and green pepper pieces in a dish to salt and pepper. Scatter them over the vegetables.
Put the remaining half of the tomatoes over the top. Sprinkle with salt pepper and pour oil over all.
Bake in a moderate heat oven for one and a half to two hours adding, if necessary, some warm water.
