Eggplant Filled Pastry (Burekas Handrojos)
These tasty eggplant filled pastries are crunchy on the outside and creamy in the inside. The perfect finger-food for a party.
Ingredients:
1 eggplant
1 onion
1 tomato or an 8 oz can
1/4 c water
1 Tbs salt
1/4 Tbs pepper
1/8 cup la victoria sauce
1 Tbs sugar
1/4 Tbs spike
1 Tbs garlic
1/4 Tbs celery seed
1 tsp oil
Some phyllo sheets
2 egg whites
somw melted butter for brushing the beurek
Procedure:
Peel the eggplant and dice. Slice, dice the onion into small pieces and saute in some oil. Cut up tomato into small pieces. Add water, eggplant, onion and tomato in pot. Stir, then put remaining ingredients into pot. Stir together. Then let it cook in low heat until almost dry about 1 hour.
When cool add 2 egg whites. Put some filling in a double phyllo sheet piece to obtain a cigar form 4-inches, brush with butter and bake with the closing down in a medium high oven. The beurek are ready when the phyllo is golden.
