Lamb Stew with Vegetables

Serve this lamb stew with rice or couscous and accompany with a green salad for freshness! If cooked carefully and on low heat the lamb meat will become tender and very juicy. A meal to be eaten in company!

Ingredients:

2 lb lamb cut in pieces
4 carrots sliced
6 whole garlic cloves
4 small shallot onions peeled 
2 cloves crushed garlic
2 cups spinach
1/4 cup walnuts crumbled
1/4 cup parsley finely chopped
1 1/2 tsp cinnamon
1/4 tsp coriander
salt & pepper

Procedure:

1. Put the lamb in 1 ½ cup of water with cinnamon, pepper, coriander and salt. Simmer 10 minutes.

2. Add carrots cut up, whole garlic cloves, and small onions. Simmer 10 minutes. Add crushed garlic. Simmer 20 minutes.

3. Add the spinach and simmer for another 10 minutes. Garnish with walnuts and parsley.

You may use zucchini instead
