Pastry baskets with Frankfurt sausages and mushrooms
These savory nests would be perfect for a festive brunch or buffet dinner. They are seriously delicious! They are always a hit with children and adults alike. The buttery, flaky crust with the cheese vegies filling is pretty much perfect.
Ingredients:
2 sheets of thin pastry
Olive oil
1 leek chopped
2 Frankfurt sausages
150 gr of mushrooms sliced
100 gr German Gouda cheese
3 table spoons of brandy
2 table spoons of butter
2 table spoons of parsley
1 tooth of garlic – finely chopped
Salt and Pepper
Procedure:
Cut the sheets of thin pastry into four and brush them over with olive oil. Place two pieces one on top of the other in four separate small baking tins (or in a muffin tin).
Melt the butter in a frying pan and lightly saute the mushrooms, leeks, sliced sausages and garlic. Stir in the brandy. Remove from heat as soon as the brandy has evaporated and add salt and pepper. Top with chopped parsley.
Fill the small baking tins with the mixture, share the cheese among the four and cover with the remaining two sheets of thin pastry. Bake in a medium heat oven at 180 degrees for about 20 minutes.
