Omelet with Tapenade, Peppers & Tuna

An omelet that can be served as a main dish garnished with a potato salad, or simple boiled potatoes.
Ingredients:
3 eggs
2 tablespoons of water
1 small red pepper, chopped
1 small green pepper, chopped
½ onion, chopped
4 tablespoons of canned tuna, strained
4 tablespoons olive tapenade
Olive Oil
Procedure:
Beat the eggs with the water. Sauté the peppers and the onion in a table spoon of olive oil. Strain the oil. Place the eggs in a frying pan and as soon as they start to set place the peppers and onions over the top. Add the tuna and the tapenade. With a spatula fold one half of the omelet over the other to close it and serve immediately.
Tips
Ommit the tuna if your guests are vegetarians.
