Vegetable and Sausage Stew (Spetsofai)

 I first tried this plate under a platan tree in Makrinitsa village, with a wonderful view of the town of Volos, sparkling, at my feet. It was a moment when all my senses where fully satisfied! Keep in mind that there are many variations to this dish, so you may want to research further to find the one you like the most.

Ingredients:

4 Aubergine
6 peppers
1 kg sausages
1 onion
4 cloves garlic
1 kg tomatoes
Parsley

Procedure:

  • Wash the aubergines and leave them to strain for an hour.
  • Remove the seeds and cut the peppers length wise.
  • Cut the sausage into pieces
  • Chop the onion, garlic and parsley

1. Deep fry the peppers and then place them on kitchen paper that will absorb the excess oil.

2. Fry the sausages in a pan adding the onion, garlic and chopped parsley. When they start to go brown add the tomatoes and leave to boil until it forms a thick sauce.

3. Arrange the fried vegetables around a platter leaving the centre empty. Pour the sauce over the aubergines and peppers and place the sausages in the middle.

4. Served hot or cold, this dish is eaten in seconds with several dips into the sauce. Instead of sausages one may well use olives or meat balls.
