1. Pour a small quantity of olive oil into a cognac glass, rotate it gently and coat the inside of the glass with the oil.
2. Smell it. Discover the scent of the olive; determine whether it contains a hint of anything from apple to marjoram. Such scents of nature are enclosed in the olive oil just the same way as they might be enclosed in wine.
3. Sip a very small amount. Keep it in your mouth for a little while, first on the front and then on the deep side of your tongue. The virtues of good virgin olive oil will awaken your senses. Thoughts of “fruity”, “bitter”, or “spicy” will come to mind, awakening your senses.
