Salted Herring with Apples

Pickled herring with apple and onion, is there much more that needs to be said? If you are a fan of  cured and pickled fish this will definitely make your day! Easy to make, a recipe to use when in the mood to cook and don't have anyone to cook for, perfect as an appetizer to serve to impromptu guests!

Ingredients:

8 salt herring fillets
3/4 cup vinegar
2 whole bay leaves
l tsp sugar
8 whole peppercorns
1 cup sour cream
3/4 tsp prepared mustard
2 tbsp mayonnaise
2 apples
2 medium onions

Procedure:

  • Peel, core and slice the apples
  • Thinly slice the onions

1. Soak the herring filets overnight in water, changing the water several times. Drain and cut the filets into 1" (2 1/2 cm.) slices.

2. In a saucepan combine the vinegar, bay leaves, sugar and peppercorns. Cover and boil for 5 minutes. Set aside to cool for 15 minutes.

3. Add the sour cream, mustard and mayonnaise, mix well.

4. In a mixing bowl mix the apples and onions and over these pour 1 1/2 cups of boiling water. Let steep for 10 minutes and then drain.

5. In a large-mouthed jar alternate layers of herring with layers of apples and onions. Pour the marinade over and close tightly. Refrigerate for 3 - 4 days before serving.

6. Serve cold as an appetizer.
