Cevapcici, the Croatian meat kebab
Cevapcici are Croatian little kebabs, usually made of pork and beef, as in most Mediterranean countries, aside to ajvar, a dip with roasted red peppers.
Ingredients:
250g minced pork
250g minced beef
1 clove garlic, minced
1 large chopped onion
1 ts salt and freshly ground pepper
1 egg white
half a tsp paprika
Procedure:
In a big bowl we combine all the ingredients and work with our fingers until the meat is incorporated with all other ingredients, approximately 10 min.
Take a small handful quantity for each Cevapcici and roll into a sausage shape fat kebab.
Cover the portions in cling film and put in the fridge for an hour. It helps bond them together.
If you want, you can put them straight in the freezer at this point.
Cook the Cevapcici in the broiler of the oven until done according to taste, or even better in a charcoal BBQ.
They should be well cooked inside.
