Orange Pistachio Salad

Doxis Bekris is the young and very successful executive chef of Costa Navarino. Take a walk with him through the resort vegetable garden and then go into the Omega Restaurant beautiful and modern "kitchen area" to learn how to cook some easy and healthy dishes. Here he walks you through one of his recipes, that you can easily try at home!

Ingredients:

Dressing

  • ¼ Cup olive oil
  • 5 tbsp orange juice
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh tarragon
  • ½ tbsp paprika
  • 1 clove garlic, minced
  • Salt, pepper

Salad

  • 6 cups mixed salad greens,washed and dryed
  • 2 medium oranges
  • 1/3 cups Aegina’s pistachios,chopped
  • 1 cup celery,chopped
  • 100 gr of graviera cheese

Procedure:

Peel and thinly slice the orange or cut orange supremes

Tear lettuce and place in salad bowl.

Add remaining ingredients.

For the salad dressing combine all ingredients.

Pistachio trees have been cultivated in Aegina since 1860 and are considered to be the best variety of pistachios in the Mediterrenean
