Baked Vegetables and Formaela
Formaela cheese has a similar texture to haloumi, with a rubbery and firm texture this cheese when cooked is fantastic.
Ingredients:
200 gr formaela
1 eggplant
2 zucchini
1 red pepper
1 yellow pepper
4 fresh onions
4 portobello mushrooms
olive oil, thyme
For the dressing:
2 tbsp sesame paste
2 tbsp balsamic
juice and gratings of 1 orange
½ cup water
1/2 tsp mustard
2 tsp honey
one pinch of cumin
salt and pepper
chopped parsley
Procedure:
Preheat the oven to 200°C
1. Slice the vegetables, sprinkle with some olive oil, thyme, salt and pepper and bake in the oven for about 15-20 minutes.
2. Slice the formaela, oil it and also bake it in the oven for 5-8 minutes.
3. Mix all of the dressing ingredients in the mixer and blend. Taste and correct the flavor by adding some honey, if necessary.
4. Serve: layering the baked vegetables with the formaela and drizzle the dressing on top. Garnish with finely chopped parsley.
