Skordalia, Special Garlic and Almond Dip

You either love it or you don't! It is spicy, it is smelly but it is also delicious and traditional! Accompany with fried fish or  fried thinly sliced seasonal vegetables (tempura style).

Ingredients:

1 cup blanched almonds
1 cup dried, soaked, squeezed bread
4 blanched garlic cloves, peeled
Salt to taste
White pepper to taste
½ cup extra-virgin Greek olive oil or more as needed

Procedure:

1. Grind the almonds, bread and garlic in a food processor to a fine meal.

2. Add the olive oil, salt and pepper and continue processing until totally smooth. Serve.

Tips

Youn can replace bread by adding mashed potatoes in your mixture.
