Loufes with Lemon Juice -A Species of Aquatic Βird
Loufes is a type of aquatic Greek bird with a strong taste that gives this dish a powerful and tasteful aroma; this island game recipe can be used for various different birds. Accompany with rice pilaf or mashed or fried potatoes.
Ingredients:
2 loufes or 2 ducks
1 large garlic
1-2 pieces rosemary
2-3 lemons (only the juice)
salt and pepper
1/2 3/4 cup olive oil
2 cups water
Procedure:
1. Clean and wash the loufes well, then add vinegar to remove the smell and cut in portions. Slightly sauté the loufes with some oil and then place them in a shallow pot with the oil, the garlic, the rosemary, the salt, pepper and water.
2. Cover the mixture with the lid and leave to simmer in a low temperature, adding water when necessary.
3. It is ready when the meat has softened and the sauce has thickened. Drain the sauce and then place it in the pot again to boil once more.
4. Pour the lemon juice all around in the pot and shake.
