Marzipan with Rose Water

Marzipan derives its characteristic flavor from bitter almonds. Most marzipan is flavored with rosewater.
Ingredients:
- 2 egg whites
- 1 egg, the yolk
- 600 gr granulated sugar
- the juice from one small lemon
- 2-3 s bitter almond essence
- 3 s rose water
- 1 kg almonds, cleaned and ground
- 1-2 tbs breadcrumbs
- 2 cups icing sugar
Procedure:
Preheat oven at 200° C.
In a bowl or mixer bring to meringue the egg whites, sugar and a few drops of lemon juice.
Add the yolk, almonds and essence of bitter almond and mix gently to produce the dough.
If the dough is watery, add a little of the breadcrumbs.
Pick a little dough and knead round balls to produce the marzipan.
Place the marzipan in a large baking pan lined with baking sheet. Bake for 15 minutes.
When the marzipans are slightly brown, remove them from the oven and drizzle them with rose water immediately.
When done, sprinkle marzipans with icing sugar.
