White Wine Marinade

There are few but important things one needs to know in order to cook well, and the French have contributed much of this basic technique to the cooking world; to understand how marinating works and to know a few marinade recipes are two of those things. This white wine marinade, is a basic recipe that can be used to aromatize and soften many a meat and fish; reduce the marinade to make a delicious white wine sauce or use to for blanching in.
Ingredients:
- 1 bottle of white wine
- 1 leek, coarsely chopped
- 1 carrot, coarsely chopped
- some parsley
- green, pink and white peppercorns
- a few coriander seeds
- a pinch of turmeric
Procedure:
Place the fish or white meat along with the marinade ingredients in a bowl and refrigerate for 4-24 hours.
The marinade can be reduced to make a sauce or can be used for basting.
It’s a good idea to brown or slightly sauté the fish or white meat prior to cooking it.
Tips
You may add fennel and carrots if using it for fish.
