Salted Dry Cod with Potatoes
This delectable and satisfying stew is homey but delicious for company as well. It's a Mediterranean dish with versions from many countries including Spain, Portugal, Croatia and Greece.
Ingredients:
1300 g salted dry cod
1 1 1/2 kilos potatoes, sliced
1 1½ cups olive oil
juice of 2 -3 lemons
1 large onion sliced
1 garlic, cleaned
pepper
3 glasses water
Procedure:
1. Cut the cod into pieces and place in a bowl filled with water. Leave it in the water overnight.
2. Change the water 2–3 times.
3. The next day, before cooking, clean the scales from the cod and then rinse well.
4. In a medium shallow cooking pot place the potatoes, the onion, the garlic cloves and stir. Then place the cod pieces in the pot with the skin facing up.
5. Add plenty of pepper, the oil and the water, and cover with a lid.
6. Leave the mixture to simmer at a medium temperature, stirring once in a while, so that it won't stick to the pot or dry up, in which case add water if necessary.
7. When all the ingredients and the broth thicken then pour in the lemon juice and shake the pot. Leave it to boil a bit longer and then remove from the burner.
8. The juice in the pot should be thick and white.
