Samsades
Traditional Cretan "samsades" were handmade by local village women, they are excellent for coffee or tea or just as a sweet snack anytime.
Ingredients:
For the pastry
1 kg of flour
½ cup of olive oil
water
For the filling
2 cups of sesame seeds, roasted and pounded
1 cup of ground almonds
½ tsp of cloves
1 tsp of cinnamon
½ cup of sugar
5 cups of must
Procedure:
Preheat oven at 180° C.
1. In a large bowl, combine the sesame seeds, almonds, cloves, cinnamon and sugar.
2. In another bowl, prepare the pastry dough by combining the flour, 2 tablespoons of olive oil and as much water as it takes to make a soft dough.
3. Roll out to a medium thickness, brush with the remaining oil and cover the entire surface with the filling.
4. Using a pencil-thin rolling pin, wrap the edge of the pastry over the pin and roll 4-5 around it.
5. Gather the roll that has formed by pushing in from both ends.
6. Remove from the pin and cut into rosettes diagonally; place in a buttered baking tray.
7. Repeat the procedure until all pastry and all the filling have been used.
8. Bake in a medium oven for 30 minutes; while still hot, immerse in the must which has been placed in a pan; leave for 10 minutes.
9. Remove and place on a serving platter.
