Kinoa salad with feta cheese

A spring fresh salad with kinoa which allowed for those who follow this restricted diet.
Ingredients:
1/2 cup kinoa, boiled according to instructions
1 cup vegetable stock
2 tomatoes, cubed
1 onion cubed
200 gr. baby spinach
2 tbsp olive oil
juice of one lemon
salt and freshly ground pepper
1/2 cup feta cheese crumbled
2 ripe avocado
Procedure:
In a big salad bowl, throw in all the vegetables, with olive oil and lemon and season with salt and pepper.
Just before serving, we cut the avocado in small cubes and place on top on the salad and serve immediately.
