Chicken Paprika

A simple recipe that can be accompanied with home-made fried potatoes or a plain rice. You may use wine instead of water for the cooking.
Hungarian paprika is best, so try to find - it will make a difference in the tasting.
Ingredients:
- 1 large chicken, cut in portions
- 3 tbsp flour
- 2 tbsp salt
- 1/4 tsp pepper
- 4 tbsp olive oil
- 1-1/2 cups sliced and diced onion
- 1 tbsp paprika
- 1 cup boiling water
Procedure:
Season chicken with flour, salt and pepper.
Heat the oil well and brown the chicken, adding few pieces at a time.
Remove chicken and brown onions adding oil if necessary.
Return chicken to the pan, sprinkle with paprika and add water.
Cover and cook over low heat for 1-1/2 hours or until chicken is tender.
Important to check that there is always enough water and that there is a constant soft boiling.

Try to buy free range chicken that has a varied diet and has lived a much happier life!
