Fresh Peas Stewed with Tomatoes, Olive Oil and Dill
Give Peas a chance
Ingredients:
750 gr fresh peas
½ cup Greek extra virgin olive oil
1 large red onion, finely chopped
2 garlic cloves, pureed
4 large, ripe tomatoes, grated
1 bunch fresh dill, finely chopped
2 tbs ouzo
Salt and freshly ground black pepper to taste
Procedure:
Heat the olive oil in a large, wide stewing pot and cook the onion over medium heat until wilted, about 5-7 minutes.
Add the garlic to the pot and stir.
Toss the peas into the pot and stir together with the onions and garlic to coat in the olive oil.
Add the grated tomatoes and enough water to come about three-quarters of the way up the peas. Season with salt and pepper.
Cover the pot and simmer the peas over low heat for about 35 minutes.
Add the dill, ouzo and pepper.
Cover and continue simmering another 10 minutes or so, until the peas are very tender. Remove, cool and serve.
