Kiskeki - Pork with wheat
Kiskeki is a dish served in Lesvos on saints’ days and at weddings, consisting of pork and wheat boiled together for many hours in a large cauldron. It is served with yoghurt.
Ingredients:
1/4 cup olive oil
1 kg of pork meat with a little fat, cut into medium pieces
salt and freshly ground pepper
2 red hot peppers
1/2 cup butter
2 onions cut in slices
1 small spoonful of grounded cumin
greek wheat ( otherwise you can use steamed cous cous)
yogurt for serving
Procedure:
1. Heat the olive oil into a large pot and then place in the pork, stirring from time to time until roasted brown.
2. Add salt, pepper, grounded cumin and hot peppers.
3. Pour enough water to cover the meat and let the covered pot boil over reduced temperature.
3. During meat cooking (2 hours) put the wheat in a medium pot with enough water and boil it stirring continuously.
4. Turn the temperature down and let the wheat simmer for about 1 1/2 hour.
5. Turn off the fire and drain the wheat.
6. Cook the onions in butter until lightly brown.
7. Pour over the wheat.
8. Put the cooked pork pieces in a large dish with the onions around pour over the wheat and stir the mixture. Serve with yogurt.
