Lamb Baked in Paper

Accompany this succulent and aromatic leg of lamb with potatoes, which are fried, or baked whole without peeling.

Ingredients:

1 leg of lamb approx. 2 kg
2 garlic cloves finely chopped
finely chopped parsley, thyme
grated lemon rind

Procedure:

Preheat oven at 190° C.

  • Finely chop garlic, parsley
  • Grate lemon rind

1.  Take the leg of lamb and remove the bones. In their place add the garlic, parsley, thyme, lemon rind, salt and pepper.

2.  Wrap in a roll, baste with lemon and oil and wrap with waxed paper.

3.  Bind it tightly with string and bake in medium heat for two hours.
