New Year's Pumpkin Pie from Thraki
This savory Thracian pumpkin pie is eaten on New Year's Eve.
Ingredients:
800 gr phyllo crust
2 kilos yellow pumpkin
400 g walnuts
200 g unsalted crackers
100 g raisins
100 g sugar
cinnamon and clove, grated
200 ml orange juice
oil for the leaves
For the syrup
400 g sugar
400 ml water
1/2 lemon
1 cinnamon stick
Procedure:
Preheat oven at 170º C.
1. Dice the pumpkin and bake it with a little sunflower oil for 30 minutes.
2. Strain it carefully, without crushing it, and mix it with the rest of the ingredients.
3. Place 2-3 leaves on the pan, spread some of the filling and continue with leaves and filling until the filling finishes.
4. Bake for about 1 hour.
5. Prepare the syrup with the sugar, water and lemon. Boil it for 15 minutes.
6. Pour the cold syrup over the pie when you take it out of the oven.
