Pan-Fried Formaella Cheese

Formaella from Arachova Parnassou is traditional Greek cheese. It is a hard cheese with piquant taste and rich flavor, which is often consumed fried as "saganaki" .
Ingredients:
1/2 lb cylinder of formaella cheese, cut into 1/4-inch rounds
1/2 cup all purpose flour for dredging
2-3 tbs butter
1 lemon, halved or quartered
Procedure:
1. Lightly dampen each round of cheese by running it under the faucet.
2. Dredge it lightly in the flour and shake off the excess.
3. Heat the butter in a large nonstick skillet and fry the cheese slices a few at a time over medium-high heat, until they begin to soften and melt.
4. Remove, place on a plate and serve, sprinkled if desired with lemon juice.
Tips
You can omit the lemon and use a sweet fig marmelade to accompany the cheese
