Shrimp and Cheese Canapes

This savory Greek appetizer is so easy to make  and is the perfect way to start  any dinner or cocktail  party.

Ingredients:

  • corn bread for the canapes
  • 20 shrimps (No. 4)
  • 100 gr soft peppery cheese (kopanisti)
  • 1 red pepper
  • 100 gr mayonnaise
  • olive oil
  • fresh basil

Procedure:

Clean the shrimp  and gently boil in salted water.

Bake the red pepper and remove the skin and seeds.

Mix the kopanisti  in a blender with the mayonnaise, red pepper and 2 spoonfuls olive oil.

Cut the bread with a pastry form cutter in the desired shape and spread the mix and the shrimp evenly on top.

Garnish with the fresh, finely chopped, basil.

Tips

Any kind of soft white cheese will do for this recipe, but if you can find kopanisti, it will make the difference
