Sandwich: Fava or Humus, Arugula & Smoked Bacon Wrap

This wrap can be served in a lunch box for young and old, on a finger food buffet cut into small sushi-like rolls or taken on a picnic!

Ingredients:

1 large wrap
1 large flat soft pita bread, 8-10 inches in diameter
3 tbsp home - made hummus or greek fava
4 slices smoked back bacon or other smoked ham
1 small bunch fresh arugula, leaves only

Procedure:

1.Spread the humus or fava over the pita.

2. Place the ham  or crunchy cooked bacon on top and then arugula, evenly over the surface.

3. Wrap tightly, cut into 4-6 pieces using a serrated knife, secure each piece closed with a toothpick and serve.

 

Tips

Add sun-dried tomatoes, turkey, or a dollop of yogurt for some variation!
