Strained Egg Noodles with Burnt Butter and Cheese
This can be made with traditional Greek egg noodles (hilopites), which you can bring home with you directly from the village or island; or, with any hand-made egg noodles you find at a delicatessen. Simple, very easy to make and filling. A great dish to treat your children with!
Ingredients:
500g Greek or other egg noodles
500g salted butter
2 cups grated Greek Kefalotyri cheese or any other type of piquante cheese
salt and white pepper
Procedure:
1. Bring a full pot of salted water to a boil and cook the egg noodles until well done. They should be softer than al dente in texture.
2. Just before the noodles are strained, melt the butter in a shallow skillet over low heat until the butter bubbles up and browns.
3. Spread a third of the strained noodles on a large platter and sprinkle with a third of the cheese. Pour the melted butter on top. Add a second layer of noodles, cheese and butter and repeat one last ime.
4. Serve immediately!!!
