Grilled Squid Stuffed with Feta Cheese
Every summer we go to Alonnisos island. The first place we visit is the "Elaionas", Ms. Magda Anagnostou's lovely restaurant right on the charming Lepto Gialo beach, where one of our favorite dishes is the grilled squid stuffed with feta cheese. Unless there is a full moon and they are hiding in the seaweeds, Magda’s father-in-law goes fishing and brings back whole baskets of fresh squid. She usually serves them with a green salad or, green beans and okra cooked in olive oil.
Ingredients:
- 4 medium sized squids
- 4-8 long and thin pieces of feta cheese
- 90 ml olive oil
- 2 garlic cloves, crushed
- 3-4 fresh marjoram leaves, finely cut
- salt & pepper
- lemon wedges to garnish
Procedure:
Clean the squids, without slitting them in half and wash them very carefully. Let them strain.
Cut the feta into long thin slices.
Prepare the marinade by placing the olive oil, garlic and marjoram leaves in a bowl, beat well and season with salt & pepper according to taste. Pour marinade over squids, cover and leave in cool place for 2-3 hours, flipping them over once. Stuff each squid with 1-2 pieces of cheese as well as 1-2 marjoram leaves. Place the squids over a barbeque, making sure the grid is well-greased. Fix the squid tentacles on metal or wooden skewers and place over fire as well for 2 minutes on each side. Grill squids 4 to 5 inches from medium-hot coals or under the broiler until desired cooked through, about 5 minutes on one side and 1-2 minutes on the other. Serve with lemon wedges on the side for whom ever wishes to add extra lemon juice. |
