Sauce: Red Wine Sauce (for meat)

This simple but rich and flavorful wine sauce is so versatile and delicious you can add it to any meat and create a perfect meal.
Ingredients:
1 bottle of red wine
1 onion, chopped
1 carrot sliced
1 cup stock (fish, vegetable, meat)
a little parsley
black and green peppercorn
1 clove
cinnamon stick
Procedure:
1. Put all the ingredients 9 (except for stock) in a pan and cook until reduced to 1/5. Strain.
2. Add 1 cup of stock (beef, chicken or vegetable-preferably homemade) and/or the juices of the meat cooked for the dish.
3. Add salt and pepper to taste. Strain again and add a stick of butter.

Use a Bordeaux to have a rich flavored sauce
